What's for Lunch?


With our busy lives, it can be a challenge to find time to really stop and enjoy this mid-day meal. I've been trying to make it a ritual to go out or prepare a special meal for myself at least once a week, on a day when work demands don't require that I eat at my desk. Here's what I've been up to lately.


Last week I treated myself to an alfresco lunch at a nearby Italian restaurant since our weather was finally gorgeous. Because it was a little later in the afternoon, I had the whole patio to myself!


Caesar salad, prosciutto and tomato sandwich and a new magazine... can't be beat!




I also picked up these huge, sweet strawberries on the way home.



Today I sliced them and used them in a spinach salad with smoked salmon, Parmesan and a few whole wheat crackers. Simple perfection!

  2. What a great and nummy way to treat yourself! Lunch at our house is no where near as elegant. Why is it that a salad tastes so much better when someone else makes it?

    That food looks divine! You are so good too, for eating that healthy. Of course, down here in our really hot part of the country, you have to eat like that in the summer. Hope you are having a great week!

  5. Love your blog! i'm reading all of 2011 today (not working at present). those salads made me want to jump into my computer and devour them. Yummmmmeeeeeeeeeeee! (sorry about that!)
